Diabetics must watch their sugar intake, but that doesn’t mean that they should give up desserts. The best dessert for diabetics is one with a moderate amount of sugar and high fiber content. A good example is a slice of angel food cake, which contains 10 grams of sugar per serving, 0 grams of fat, and about 4 grams of protein. Another good option is a baked apple with vanilla ice cream; it has about 20 grams of sugar per serving and provides 9 grams of protein per serving.

Chocolate Covered Strawberries

Lately, I’ve been incorporating more gluten-free items into my diet. One of the first things I noticed was a lack of dessert options. I know, I know. Pancakes for breakfast? Really? Well, hold on to your pants, because this is not your ordinary pancake recipe. These pancakes are gluten-free and diabetic-friendly, so you can indulge guilt-free. The secret ingredient that sets these pancakes apart from the rest is a dash of apple cider vinegar. The vinegar reacts with the baking powder and creates a light and fluffy texture that’s perfect for breakfast!

Rice Pudding

This is a great dessert for people who are on a diet and cannot have sugar. The recipe doesn’t need to be changed, but you can use brown rice as an alternative to white rice. For this recipe, I recommend using milk or almond milk instead of regular milk. You may also want to use cinnamon, vanilla extract, and honey if desired.

Brownies: If you’re following a gluten-free diet, you must read the label before baking any gluten-free food. Some ingredients may not seem like they contain gluten but might be processed in facilities with wheat products which could lead to cross-contamination.

They can be whipped up with just six ingredients: flourless brownie mix, butter, egg whites, water, honey, and raisins. Start by mixing the eggs, water, butter, and honey until combined.

Pour this mixture over the brownie mix and stir until combined. Fold in your favorite add-ins like chocolate chips or coconut flakes then add raisins if you’d like. Allow them to cool completely before slicing them into bars and serving!

Mix the pancake mix and cocoa powder with a whisk. Add vanilla, eggs, oil, and salt to the dry ingredients and whisk until well blended.

No Bake Peanut Butter Fudge Bars

  1. In a large bowl, mix the peanut butter, erythritol, and vanilla extract.

  3. Press the mixture into an 8×8 dish lined with parchment paper and refrigerate for 30 minutes or until set.
  4. Once chilled, cut into 24 squares and enjoy! For chocolate lovers, you can use dark chocolate instead of unsweetened cocoa powder to make it extra decadent. Coconut Macaroons: Line a baking sheet with parchment paper and place the shredded sweetened coconut on top in an even layer. Bake at 350F for 5 minutes or until light golden brown, stirring halfway through cooking time to avoid burning.

Can I use milk instead of water in a gluten-free cake mix?

It is not recommended to substitute milk for water when using gluten-free cake mix, as many gluten-free products are made with dairy-based ingredients. If you need to use a dairy product, such as milk or butter, you can use these products as long as they do not contain any gluten. You can also make your substitutes by combining oil and water. For example, one cup of oil mixed with two cups of water could be used instead of 1/2 cup of milk mixed with 1/2 cup of water in the recipe.
